Macro Friendly Taco Mac and Cheese

Macros for 1 serving: 34g protein, 21g carbs, 9g fat


30g Banza chickpea pasta (if you use another pasta option, macros will be different)

3oz ground turkey

Either homemade or packaged taco seasoning

1/2 cup broccoli

1 wedge of Laughing Cow cheese (I used aged cheddar flavor)

15g of shredded cheddar cheese


  1. Boil water and cook the pasta according to the directions. Pro tip: this pasta is better al dente because it can get mushy when cooked too long.

  2. While the pasta is cooking, brown your ground turkey and add taco seasoning.

  3. When pasta is cooked, drain and save some of the pasta water. Pour a little bit of pasta water into a bowl with the shredded and Laughing Cow cheeses. Mash up the Laughing Cow cheese and start stirring until it begins to make a sauce. You can add more pasta water as needed. You may need to heat it up to get the cheese to melt all the way.

  4. Pour your cheese sauce over your pasta, stir in your taco meat, and enjoy!
