Week Before Vaca Meal Plan

Next week is April vacation for our district (not that I'm counting or anything) and I'm SO READY for some down time. Because I'm tired and ready for a break, I picked an easy meal prep for this week for lunches and we are getting 3 meal kits to account for some dinners I don't have to plan.


Here's what it looks like:


I threw chicken in the crockpot with sugar free BBQ Sunday morning, and used the 90 second microwave rice and steam fresh veggies. Meal prep was SUPER EASY this week, which worked great since I needed some extra rest.


Realistically, I won't want to cook Friday night so I just put that we'd probably get takeout that day.
